The Base: Simple Chocolate Cake
Ingredients :(A)- 125g Butter
- 125g Brown/Castor Sugar
- 2 Eggs
- 1/2 tsp Vanilla essence
- 120ml Fresh milk
(B)- 150g Flour ~
sifted - 20g Cocoa powder ~
sifted - 1/2 tsp Baking powder ~
siftedMethod :~ Cream butter and sugar untill light and fluffy.
~ Add eggs one @ a time. And then the vanilla essence.
~ Continue beating untill they are well combined.
~ Gradually fold in the B ingredient and fresh milk into the eggs mixture.
~ Pour the batter into prepared baking pan & bake @ 170°C for 30 minutes.
The Chocolate Mousse :Ingredients : - 336g Semisweet Chocolate
- 375ml Heavy Cream
- 250g Sugar (
Divide into 2 portion for egg whites)
- 125ml Water
- 4 Eggs ~
separated - 1 Tbs Coffee
- Pinch of Salt (
for egg whites)
- 1 tsp Cream of Tartar (
for egg whites)
- 1 Packet Serbuk Agar-agar (
optional)
- 1 Packet Vanilla Sugar
Method :1. Use a non-stick sauce pan to bring the water till boil.
2. Then add the sugar & serbuk agar² and stir constantly until all sugar & serbuk agar² is dissolved.
3. Over a very low heat, add in the chocolate and frequently stir it until u get a smooth mixture.
4. Beat in the egg yolks one at a time.
5. Transfer the egg mixture into a large bowl and let it cool.
6. Whisk the egg whites until foamy and then add in the remaining sugar, a pinch of salt & cream of tartar and continue whisking until they turn white & fluffy.
7. Fold in 1/3 egg whites into the chocolate mixture and follow with remaining 2/3rds.(
Fold until no white remains without deflating the batter)
8. Whip the cream until stiff and gently fold 1/3 of it 1st into the chocolate mixture and then fold in the remaining whipped cream.
9. Pour the batter onto the chocolate cake and cover the top with baking paper.
10. Place it in freezer till well set and keep cold until ready to serve.
