Use a non-stick sauce pan to bring the water till boil.<br />2. Then add the sugar & serbuk agar² and stir constantly until all sugar & serbuk agar² is dissolved.<br />3. Over a very low heat, add in the chocolate and frequently stir it until u get a smooth mixture. <br />4. Beat in the egg yolks one at a time.<br />5. Transfer the egg mixture into a large bowl and let it cool. <br />6. Whisk the egg whites until foamy and then add in the remaining sugar, a pinch of salt & cream of tartar and continue whisking until they turn white & fluffy.<br />7. Fold in 1/3 egg whites into the chocolate mixture and follow with remaining 2/3rds.(<font size="-2">Fold until no white remains without deflating the batter</font>)<br />8.
