Spinach Quiche


Pizza Crust :
3/4 cup warm water
1/2 packet active dry yeast
1 3/4 cup bread flour
1 Tbs oil
1 tsp salt
1/2 tsp sugar
(Mix all the ingredients above and knead quickly to form a smooth and elastic dough. Cover the dough and leave it to prove in a warm place for at least 30 minutes.)

Spinach :
500g spinach leaves
A cup of water
A pinch of salt
(Mix the water with salt and bring it to boil. Add the spinach leaves and leave for 5 minutes to boil. Then drain them well.)

Tuna :
4 cans of tuna fish(with sauce)
1 big onion
1 tsp of lime/lemon juice
(Chop the onion into cubes. Heat the oil from the tuna cans and fry the onion till tender. Then add all the tuna fish and fry till a bit dry. And set aside.)

Other ingredients :
250ml whipped cream
2 eggs
pepper
salt
mozarella cheese ~ grated
oregano

Method :
1. Grease the baking tin. Roll out the dough on a floured surface. Place the dough into the baking tin, making a 3 cm edge around the side. Let it rest again for at least 15 minutes.
2. Spread the tuna and then the spinach evenly.
3. Whisk the eggs and the whipped cream in a separate bowl until they are completely mixed. And taste it with a little bit of pepper and salt.
4. Carefully pour the egg mixture into the pizza crust, over the spinach tuna mixture.
5. Spread a thin layer of mozarella cheese and oregano over the top.
6. Bake it in preheated oven @ 200°C for 30 minutes.
7. If the center has not fully set, then leave the quiche in the oven for a few more minutes, checking to ensure that it's completely cooked through.
