Sambal Belacan Berlinang

Bahan² :
4 tangkai cili hidup(merah/hijau)
6-8 tangkai cili padi(merah/hijau)
Belacan(sebesar ibu jari)
Air asam jawa(pekat)
Sedikit perahan lemon
garam
gula

Method :
1. Blend semua cili bersama belacan dan air asam jawa. Kalau ade cili² x hancur lg.. tmbh air asam jawa lg.. tu yg akn jadi berlinang tu.. hehe(Cop!Kalau gune batu lesung.. tumbuk cili²+belacan je dulu.. air asam jawa kemudian)
2. Lps blend.. tuangkn ke dlm mangkuk.. dan masukkn sedikit aje perahan lemon.
3. Last skali perasakn dgn garam dan gula.

Gulai Ayam Biryani

Gulai ayam ni diilham oleh my cik abe sndiri.. Ade satu hari tu.. tetibe cik abe kate bia dia masak.. dia kate nk buat resepi baru.. dia nk gune biryani paste yg ade dlm peti ni ha..cahida pon t'amatla hepi bile cik abe offer diri nk masak.. hehe. Hasilnya bole tahan.. gulai ayam.. tp rase cam gulai ikan.. hmmm camne tu? tp serius! mmg sedap.. =)
So.. kelmarin cahida pn masak ayam gune biryani paste tu jgk.. tp dgn style sendiri la.. aritu x tgk cik abe msk mcmane.. dan hasilnye lg sedap dr cik abe buat.. hehehe.. kan abah kan=D

So.. here we go..
Bahan² :
~Tumisan~
1 biji bawang besar }dihiris nipis
3 ulas bawang putih }dihiris nipis
2 biji cili merah }dipotong serong
sekuntum bunga lawang
setangkai bunga cengkih
2 biji buah pelaga
sbtg kulit kayu manis
~Digaul bersama ayam~
8-10 ketul ayam
2 s/b serbuk kari
2 s/b biryani paste
sedikit serbuk cili
garam
~Lain²~
250ml santan
2 btg serai }dititik
3-4 biji cili padi}belah jgn sampai putus..kalau xnk belah pn takpe
sedikit air
garam+gula

Method :
1. Gaulkan ayam dgn serbuk kari + serbuk cili + biryani paste + sedikit garam.
2. Panaskan minyak dan tumis bahan² diatas sehingga garing.
3. Masukkan ayam dan gaulkan. Biarkan seketika sehingga agak kering.
4. Masukkn santan. Kalau pekat sgt tambah air sket.
5. Pastu trus masukkn serai + cili padi.(Kalau suke bole masukkn jgk carrot dan kentang)
6. Masukkn gula+garam secukup rase.
7. Perlahankan api dan biarkan sehingga ayam betul² masak dan sebati dgn kuah.
8. Setlh siap bolehla dihidang bersama nasi ataupon roti.

Tips Cahida :
~Biasanya gulai ayam kite akn masukkn asam keping(asam gelugor).. tp dlm resepi ni xpayah sbb biryani paste tu dh masam.
~Kalau nk bangkitkn lg aroma dan rase gulai ni.. bole masukkn daun limau purut @ daun kunyit.
~Gulai² mcm ni kalau mkn ngan nasi.. kena ade sambal belacan.. baru best! So.. coming up next.. Sambal belacan=D

Puding Karamel Lapis Coklat

pic ni diambil mase 1st time buat.. nampk tu ade cacat² sket kt tepi tu.. 2nd time buat alhamdulillah mmg cantek.. kite dh bole adjust byk mane kite nk ltk utk setiap layer tu so that kite akn dpt layer yg perfect takpon almost perfect.. =)Yg penting sblm kite nk keluarkn dr bekas kukusan tu.. puding kena betul² sejuk. Kalu x..nnti adela nk cacat kt mane² nnti..

Sumber resepi :hanieliza
Bahan A :
1 tin susu cair
5 Tbs gula
3 biji telur A
1 tsp esen vanilla
Bahan B :
1 tin susu cair
5 Tbs gula
3 biji telur A
4 Tbs serbuk koko atau 1 s/k serbuk nescafe + 1s/k coklat pes
Bahan C :
2 Tbs gula [hanguskan] atau 2 Tbs madu(cahida buat gula hangus je..)

Method :
1. Kacau bahan A dan bahan B dalam 2 bekas yg berasingan. Tapiskan.
2. Panaskan periuk kukusan
3. Masukkan gula hangus atau madu dalam loyang 8 x 8 inci.
4. Masukkan 1/2 cawan adunan bahan A dan kukus selama 5 minit atau sehingga masak.
5. Bila dah masak masukkan pula 1/2 cawan adunan B diatas lapisan adunan A.
6. Ulang bahan A dan B berselang seli sehingga habis.
7. Sejukkan dan terbalikkan dalam pinggan hidang.
8. Potong dan hidangkan.

Tips Cahida :
~Sapukn loyang/bekas kukusan dgn butter sikit. So that sng nk kluarkn nnti.
~Mase nk kluarkn dr bekas utk dihidang.. make sure puding dh betul² sejuk.
~Bole gune pisau kecil utk tanggalkn puding dr bekas. But have to be very careful! Kalau x hasilnye nnti cam dlm pic ni nnti.. =(

Bengkang Roti

ni resepi drpd mak cahida.. caranya sng sgt.. cume tempoh membakar tu je yg lame...
utk resepi ni cahida x tulih sukatan sbb mak pn bgtau agak² je.. so kite pon main agak² je la.. alhamdulillah menjadi.. dan sedap.. =)


Bahan² :
Roti potong gardenia @ yg sewaktu dgnnye.. (ikut byk mane kite nk buat)
santan
sedikit air
gula
secubit garam
telur

Method :
Cubit² roti jadi kecil².. tp jgn terlalu kecil..
kemudian rendam cebisan² roti td dalam santan.. jumlahnya cukup sekadar menenggelamkn roti² td.. santan kalau agak pekat cairkn sedikit..
Biarkan dlm sejam lebih.. in btw kite kacau² sikit rendaman tu .. sbb takut ade roti yg x terendam..
So.. bila roti dh lembut dan semua roti dh serap santan tadi(bkn serap sampai kering santan tu ok..)dan kelihatn hampir hancur.. boleh la kite campurkan bahan² seterusnya..ikut citarasa sendiri..
last skali tuangkan dlm acuan bengkang(yg ade lubang kt tgh) dan bakar pada suhu 180°C selama 2-3jam @ sehingga masak..

Mexican Bun


lalalala... my 1st mexican bun..
Sumber resepi :mamafami

Filling
Ingredients :
100g salted butter ~ softened
1/4 teaspoon vanilla essence
35 g brown sugar

Method :
1. Beat butter with an electric mixer on medium speed using the paddle attachment for three minutes.
2. Add in vanilla essence and brown sugar. Beat till creamy.
3. Regrigerate the mixture until firm.
4. Divide mixture into 20g portion ball. Keep refrigerated until ready to use.


Topping
Ingredients :
65 g butter ~ softened
55 g icing sugar ~ sifted
1 Grade A egg ~ lightly beaten
1/3 teaspoon coffee flavouring(or you can use 1 1/2 teaspoons instant coffee dissolved in 3/4 teaspoon water)
65 g low protein (high ratio) flour or Weizenmehl Typ550~ sifted

Method :
1. Beat butter and icing sugar until mixture is light and fluffy.
2. Gradually beat in egg.
3. Add in coffee flavouring.
4. Sift flour into mixture and mix on low speed until combined.
5. Refrigerate until ready to use.


Sweet Dough
Ingredients :
250 g high protein flour ~ sifted
2.5 g bread improver ~ sifted
2.5 g bread softener (kalau x letk pon xpe.. kalau ltk roti jadi lg lembut..)
10 g milk powder ~ sifted
38 g caster sugar
1/2 teaspoon salt
1 teaspoon instant yeast
1 egg ~ lightly beaten
135 g water or milk (do not use milk powder if using milk)
30 g butter ~ softened

Method :
1. Mix sifted flour, bread improver, bread softener, milk powder, sugar, salt, instant yeast and egg in a mixer bowl.
2. On the mixer (with dough hook) on low speed. Pour in the 3/4 of the liquid, a little at a time.(kalau nk gune tgn pon bole.. hehe)
3. Add in the butter and pour the balance liquid if needed. Knead till dough is soft, smooth and elastic (not sticky).
4. Divide dough into 55 g portions. You should get about 9 portions.(ataupon ikut suke hati nk divide besa² mane..)
5. Roll each portion into a ball. Cover the balls of dough and leave to rest for 10 minutes.
6. Flatten the dough and place a portion of filling in the center of the dough.
7. Gather the edge and pinch to seal. Make sure to seal well or the filling will leak out during baking.
8. Place on a greased baking tray. Repeat with remaining portions of dough. Place each bun about 7.5 cm apart on the baking tray.
9. Prove for 45 minutes in a warm place or until doubled the size.
10. Pipe the topping on the buns in a spiral, starting from the centre.
11. Bake in a pre-heated oven at 170 C for 12 - 15 minutes or until bun are lightly brown.
